virgin pina colada recipe is a very refreshing Moctail drink made with fresh pineapple juice, coconut milk and ice cubes. INGREDIENTS 2 TO 2.25 cups chopped pineapples 4 to 6 ice cubes 3\4 cup thick coconut milk or 200 ml coconut milk 2 to 3 tbsp sugar or else you can skip sugar. as you want a few pineapple wedges for garnishing METHOD 1- First step is to peel and slice the pineapple .if you use half of a medium pineapple you get about 2 cups chopped pineapple wedges.add the wedges in a blender jar 2- add sugar. you can skip sugar if you want. 3- blend to a smooth puree. there should be no pineapple chunks in the puree 4-then add 200 ml coconut milk, you can also use coconut cream , but then add some water or coconut water to thin the puree 5- add 4 to 6 ice cubes 6- blend once more till smooth and everything is mixed evenly 7 pour pina colada on glasses and serve immediately. you can garnish with pineapple wages if you want.
